Grain-free blueberry coconut muffin recipe

If you’re looking for healthy snacks to have at arm’s reach around the house, this the perfect recipe. These muffins are grain-free and dairy-free, aka fibromyalgia friendly. As you may know, grains (especially gluten containing grains) can be inflammatory to the body, and if they are removed, the inflammation in your body can subside, and in turns, your symptoms of fibromyalgia too.

Ingredients:

  • 6 eggs

  • 1/2 cup of coconut oil, melted

  • 1 teaspoon pure vanilla extract

  • 1/4 cup maple syrup

  • 1 lemon - juice and zest

  • 1/2 cup coconut flour

  • 1/2 teaspoon sea salt

  • 1/4 teaspoon baking soda

  • 1 cup fresh or frozen (thawed) blueberries

Instructions:

  1. Preheat oven to 350 degrees F.

  2. Whisk the eggs, coconut oil, pure vanilla extract, maple syrup, lemon juice, and lemon zest together in a large mixing bowl.

  3. Sift the coconut flour, sea salt and baking soda, stir until well combined. Gently fold in the blueberries.

  4. In a muffin tin, scoop 1/4 cup of the batter into each lined muffin cup.

  5. Bake for 25-30 minutes (allow more time in silicone cups).

  6. Remove, cool and enjoy!
